This week's Badass Chick is Kathryn Ernst, Founder and CEO of Twist Bakery & Cafe which caters to clients with allergies and was recently named the number one gluten-free bakery in the US. 

Kathryn has had allergies her whole adult life, and her kids have allergies as well. When Kathryn began taking gluten out of her diet, she was so disappointed with the gluten-free foods available to her. She had been a foodie all her life and came from a family that spent hours upon hours in the kitchen baking, so she knew these items could taste better and decided to do some baking on her own. For a year, she worked to perfect recipes that are free from nuts, gluten and artificial flavors and coloring. Seven years ago Kathryn opened her first bakery in Millis and it began picking up steam. What started out as a passion project turned into a way to make a living and help others facing severe allergies to not only enjoy quality food, but to feel safe while doing so. USA Today named her the number one gluten-free bakery in the US and this week she just opened up her second location, in Burlington. Safe to say she's a pioneer in this allergy-free food industry and I love that she's turned her passion into her profession!
